Sparkling Rose Table Wine (Extra Dry)

Characteristics
A bright rose colour, aromas of red fruit, cloves and butter caramel. It is marked by its cool rich taste and its long-lasting fruity after-taste.
Vinification:
The grapes are destemed, crushed and macerated for a night at low temperature, to extract the colour from the skins. Following maceration, the skins are pressed up to 1 bar and the juice is left to settle. After racking off the lees the juice is inoculated with selected yeast strain and the fermentation takes place at controlled temperature below 15?C. The "base wine" rests on its lees for 5 months before the addition of "liqueur de tirage" (same wine with concentration of 500 g/L sugars). The wine is bottled and let to ferment for second time in the bottle (methode traditionelle). "Sur-lie" lasts for 14 months before disgorgement. Following disgorgement comes the addition of "liqueur d?expedition" and finally bottling under cork
