Regional Wine of Central Greece

Serving Suggestions:
An excellent aperitif wine. Goes well with seafood, fresh salads and pasta. It can be great companion to traditional Greek stews
Characteristics:
Light yellow colour with green tints. The nose is dominated by citrus and herbaceous aromas while the palate is characterized by freshness due to the acidity and the aftertaste of herbs.
Vinification:
The grapes are co-fermented. After careful selection of the grapes in the vineyard and the winery, the grapes are whole bunch pressed and only the free run juice is collected. After settling and racking the juice ferments in low temperature to maintain the varietal aromas. The fermentation lasts about two weeks
Microclimate:
Mild winter with low precipitation. Hot and dry summer

Varieties: Roditis, Savvatiano, Sauvignon Blanc
Region: Attica, Anavyssos. Vineyards with yields that are not exceeding 7000 kg per hectare
Soil Composition: Sandy loam clay
Vintage: Late August to early September. The grapes are hand harvested in small crates
