Dry Red Wine PGI Ioannina

Vinification:
After desteming, the grapes are crushed and immediately inoculated with selected yeast strain. Alcoholic fermentation takes place in a small stainless steel open vat and the cap is manually plunged trice per day. The temperature during fermentation is controlled between 20-25 degrees centigrade while post fermentation the wine matures in a French hogdshead (Nevers forest, Medium toasting) on its lees for about two months. The maturation process continues in the barrel for six more months after racking off the less.
Microclimate:
Elevated amounts of rainfall and snowfall during winter. Late spring and summer rains resulting in minimal vine stress, while the significant temperature fluctuation between day and night enhances the expression of varietal aromas.
