Characteristics
Deep-hued with a blue sheen. Its bouquet combines the fruitiness of a Syrah with the flowery nose of a Traminer. The barrel is also discretely present. Outstandingly well-structured, balanced and with a lasting aftertaste.
Vinification
Bursting, pressing and co-vinification of the two varieties for 15 days. 2-3 pump-overs a day during fermentation (at 18-22o C). The wine is then macerated and transferred immediately to 300-litre French oak barrels for maturation. The lees will be left in for at least two months with 3 battonages a week. The wine is then left to mature in the barrel for a further 4 months.
Microclimate
Mountain (Epirote) climate. High rainfall and snow during the winter. Cool summers with frequent storms. The climate helps the grapes to mature slowly, to retain their acidity and to manifest the full intensity of each variety's range of aromas.
